Plant my yacons

Wait until the end of the frosts, even if you have to keep your tubers in the soil while waiting. Plant in rich, well-drained soil, in full sun. Open a hole in the ground, remove some tubers and close. Water moderately. Add mulch in a thin layer of 2-4 cm.

Hill up my yacons

Form mounds twice, to increase the amount of tubers and improve drainage. The first time, after the release of the first leaves, spread the mulch, then raise the level of soil by a few centimeters around your plants. Place the mulch back. After a few weeks, spread the mulch and raise the soil an additional twenty centimeters around the plants.

The yacon must be watered at the beginning of cultivation, and possibly in dry season.

Once summer arrives, mulch thick to limit watering. Ten centimeters of dry grass or leaves is perfect.

Harvesting my yacons

Harvest in October-November, before the first frost, when the leaves wither. Take the tubers out with a pitchfork, a day when the soil is dry. This way you can let your crop dry for a few hours. The tubers are at the level of the base of the stems, no need to go deeper.

After the harvest, remove the remains and compost everything if you need room. Otherwise, cut the stalks into small pieces and leave them on the ground.
